We thought we had seen every type of pop-up possible — and then we saw this. Chef Mitch Prensky of Supper restaurant on South Street is taking biscuits on the road, with a rotating Scratch Biscuits pop-up. The first stop is The Mann Center in Fairmount Park for the Phish shows July 8 and 9 (you know, on the off chance anyone at a Phish show has the munchies).

Scratch Biscuits will return to The Mann throughout the summer. It will also make appearances at Garage on July 10, 19 and 25.

Here’s the menu for the Phish shows:

The Fuego Biscuit,$7
Jerk spiced seitan, mango habanero sauce, red bean spread, jalapeno cabbage slaw (vegetarian)

The Farmhouse Biscuit, $7
Pickled green tomato, pimento cheese, corn relish (vegetarian)

The Mexican Cousin, $8
Braised chicken tinga, pineapple-tomatillo salsa, queso fresco, cilantro
