As a bonus, the restaurant uses locally sourced ingredients that are free of artificial pesticides.

“’You are what you eat’ is such simple but honest and helpful advice,” says Rich Landau, who owns Vedge with his wife, Kate Jacoby. The two have built a huge following with their beloved restaurant. The greatest trick, perhaps, is that carnivores also love this mostly vegan, entirely vegetarian place, too. With all the calories you’re cutting by ordering the portabella carpaccio or the eggplant braciole, you can feel free to indulge in one of their devilish cocktails.

One of the most overlooked advantages to this calorie-conscious establishment is that there are several locations. That means that when you’re running around all day and need something quick – or if you want to have a healthier lunch while you’re at work – Fuel is your spot. They’ve got great lunch options and combos, but the current shining star is the Thanksgiving sandwich. We’re not going to name names here, but we feel a lot better eating this concoction than downing a similar, fattier version from one of our favorite convenience stores.
